The Recipe Every Clean Eater Needs to Know: Cauliflower “Fried Rice”

Clean eating newbies are always asking me for my top recommendations for quick, easy, versatile recipes. This recipe— cauliflower “fried rice”— is right at the top of the list. It takes under 15 minutes to prepare from start to finish, and you can doctor it up in almost any way you choose. You can toss in shrimp, chicken, pork, fish— pretty much any protein your little ol’ heart desires, and you can mix in whatever veggies you happen to have on hand in your fridge. Broccoli and shrimp stir fry? Check. Roasted red pepper and chicken? How about asparagus and salmon? The possibilities are endless! Hands down, this basic recipe is one that any clean eater NEEDS to have in their recipe box!

Shrimp Cauliflower Fried Rice


Shrimp Cauliflower “Fried Rice”
Serves 2
1/2 head of cauliflower, chopped
1/2 tablespoon sesame oil
4 egg whites
1 1/2 tablespoons low sodium soy sauce
1 garlic clove, minced
1/4 cup onion, diced
Approximately 1 cup of cooked/frozen veggies of choice
(peas, carrots, broccoli, cauliflower, mushrooms, sprouts, kale, spinach, asparagus, artichokes, carrots, peas… the sky’s the limit here, guys! please note: I don’t recommend adding tomatoes, however, as they water down the mixture and the dish becomes too soggy!)
Optional: 8 ounces of protein (chicken, shrimp, fish, pork, etc.)

 

Place the chopped cauliflower into a food processor. Process together until the consistency of rice. Set aside. Meanwhile, over medium heat, sauté garlic, onion, and veggies in the sesame oil for roughly 5 minutes until thoroughly cooked (this is also when you’d add in any additional protein if you choose to do so). Next, whisk together the egg whites and soy sauce; stir this mixture in with the veggies and scramble them together. Lastly, add in the riced cauliflower, combine well, and cook while covered for another 5 minutes or so until the rice adequately steams. My personal favorite combos are shrimp with broccoli and cauliflower, salmon with asparagus and roasted red pepper, and chicken with pineapple and artichokes makes for a surprisingly perfect combination.
