5 Ingredient Hawaiian Chicken

On a day like today when the weather here in Pittsburgh is dipping down to -10 degrees, it’s hard to see the light of warm summer weather at the end of this cold wintery tunnel… but this refreshing, delicious, and tropical clean eats recipe is a great way to help you sustain yourself until those summer days are finally here. The best part is this recipe is so simple its stupid: just throw 5 ingredients in a crockpot and, BOOM, you’re done with dinner prep for the day. Keep a-reading for the recipe!


Hawaiian Chicken (Crockpot)
Serves 4
1 lb frozen chicken breasts
1 20-oz can of pineapple, crushed or chopped (no sugar added— packed in water or juice)
1/4 cup low sodium soy sauce
2 tablespoons natural maple syrup
1 teaspoon crushed red pepper flakes

Place all ingredients in a crockpot. Cook on low for 4 hours or high for 6 hours, stirring occasionally. When finished, chicken should be tender enough to easily tear apart with a fork. Serve over brown rice or use lettuce for wraps. Personally, I love, love, love to enjoy this over a bit of mashed sweet potato with a side of grilled veggies. Yum!
