In a lightly oiled plan over medium heat, sauté red onions, salt, and pepper until tender. Next, add in the yellow tomatoes, chopped basil, bay leaves, and chicken broth. Simmer covered until the tomatoes begin to fall apart, roughly 10-15 minutes. Add in the coconut milk, remove from heat, and pour into a blender. Blend until smooth. Serve, eat, and enjoy!
