Day 3 of Fall into Fall: Golden Tomato Bisque

Is there anything more classic than a bowl full of creamy tomato soup? Unfortunately, canned varieties are high in sodium and low in flavor. This homemade clean eats version is ready in a jiffy, and it’s unbelievably scrumptious to boot! With just a touch of fresh basil, this soup is perfect to come home to after a long run on a chilly day! Give this a try!

Golden Tomato Bisque

Serves 4
1/2 red onion, chopped
1/2 teaspoon sea salt
1/2 teaspoon fresh pepper
2 lbs yellow tomatoes, chopped
2 fresh basil leaves, chopped
2 bay leaves
1 1/2 cups chicken broth
1/2 cup coconut milk

In a lightly oiled plan over medium heat, sauté red onions, salt, and pepper until tender. Next, add in the yellow tomatoes, chopped basil, bay leaves, and chicken broth. Simmer covered until the tomatoes begin to fall apart, roughly 10-15 minutes. Add in the coconut milk, remove from heat, and pour into a blender. Blend until smooth. Serve, eat, and enjoy!
