Apple Blueberry Quest Turnover

After yesterday’s yummy chocolate covered strawberry Quest bar cereal, I decided to try out another Quest bar-based recipe (I perused the Quest blog a couple of days ago and spotted some yummy recipes that have inspired me to try out cooking with Quest bars!). Today’s recipe is inspired by one of the recipes featured on the Quest blog: apple blueberry Quest turnovers. This recipe is super easy to whip up in a snap (15 minute clean eats breakfast, anyone?!), and it requires minimal ingredients to make! I chose to incorporate blueberry preserves, because, well… blueberries, yum, right?! Enjoy the recipe guys!

Apple Blueberry Quest Turnover

Serves 1

1 Quest bar, apple pie

2 Tablespoons blueberry preserves (made with Truvia/stevia; you can use whatever preserves you desire, including homemade if you’ve got it!)

2 Tablespoons vanilla Greek yogurt

Optional: cinnamon

Preheat oven to 350 degrees. Remove Quest bar from wrapper, and microwave for 10 seconds. Once soften, press the Quest bar outward into a square shape on a foil-lined baking sheet. Next, place the preserves in the center of the square, then fold the edges over to form a triangle. Press the edges down firmly to ensure the preserves don’t come out while baking. You can spray the turnover with a bit of cooking spray for a crunchier turnover. Bake at 350 degrees for 10 minutes, or until the edges are slightly browned. Top with the vanilla Greek yogurt, and sprinkle with cinnamon if desired. Enjoy!
