As a self-professed pumpkin-lover, I’m always craving pumpkin-flavored treats. And pumpkin pie? One of my hands-down favs! But who has the time to whip up a pumpkin pie with a busy lifestyle? Not this gal. Enter my under 100 calorie, 5 ingredient, 5 minute, microwavable recipe for crustless pumpkin pie! The kicker— this pumpkin pie is 100% clean to boot! Toss this in the microwave the next time you’re craving pumpkin pie without all the fuss.

Crustless Pumpkin Pie
Recipe (Serves 2)

1 cup canned pumpkin
6 packets Truvia/Stevia
2 teaspoons pumpkin pie spice
4 egg whites
1/4 teaspoon pure vanilla extract

In a bowl, thoroughly combine all of the ingredients. Pour the pumpkin pie batter into two separate microwave-safe bowls. Microwave for 3 minutes; if the middle is still wet, microwave for an additional 30 seconds, until done. Top with vanilla Greek yogurt topping if desired.

Optional Vanilla Greek Yogurt Topping
Recipe (Serves 2)

1/2 cup vanilla nonfat Greek yogurt
4 packets Truvia/Stevia
1/2 teaspoon pumpkin pie spice
1/2 teaspoon pure vanilla extract
1 tablespoon unsweetened vanilla almond milk

In a bowl, simply whisk together all of the ingredients.
