Need An Extra Morning Pick-Me-Up? Tiramisu Pancakes

Few can make it through the morning without their daily cup o’ joe. But, some days, you just need a little extra pick-me-up. On those days… whip up this delicious treat: clean tiramisu protein pancakes! Chocolatey protein-packed pancakes are stuffed with a creamy, naturally sweet, coffee-flavored filling. This breakfast is absolute clean eats heaven (just make sure that you read the ingredients on the instant coffee granules before you purchase them— many brands out there are not-so-clean!) for coffee fanatics everywhere. Enjoy this recipe the next time you’re craving a caffeine jolt beyond your morning cup of coffee!

Tiramisu Pancakes
Serves 1

1/2 cup pancake mix (a clean variety— I use Big Train)
1 tablespoon unsweetened cocoa powder
1 scoop chocolate whey protein powder
1/4 cup water
3 tablespoons Greek yogurt cream cheese (recipe previously posted here)
1 tablespoon vanilla Greek yogurt
1/2 ripe banana
4 tablespoons instant coffee granules (check the ingredients!)

In a blender, blend together the cream cheese, yogurt, banana, and coffee granules until creamy. Meanwhile, mix together the pancake mix, cocoa powder (you can add more if you’d like your pancakes to be more chocolatey!), chocolate protein powder, and water. Depending on the brand of protein powder you use, you may need to add more or less water— just make sure the batter is the consistency of pancake batter. Once mixed, drop by 1/4 cup increments onto a lightly oiled pan over high heat, flipping as soon as the edges become cakey to cook on the other side. Repeat until all of the batter has been used. Spread the coffee cream mixture in between the pancakes, serving a bit of the cream for topping. Dust with additional cocoa powder as garnish if desired.
