Heaven on a Plate— Mint Chocolate Pancakes

Who doesn’t love mint chocolate? The duo of mint and chocolate is a classic combination… for a reason! There are few out there who can resist mint chocolate, and I must admit that I am no different myself. Today’s recipe for mint chocolate protein pancakes tastes so sinfully delicious, yet this is still a meal you can munch on without any guilt. Enjoy these pancakes the next time you’re craving a mint chocolate fix!

Mint Chocolate Protein Pancakes

Serves 1

1/2 cup pancake mix (a clean variety! I use Big Train)
1 tablespoon unsweetened cocoa powder (add more if you want it even more chocolate-y!)
1 scoop chocolate whey protein powder
1/4 cup water
1 cup vanilla Greek yogurt
1/4 cup spinach (for color)
1/4-1/2 teaspoon mint extract
2 packets Truvia/stevia

In a bowl, whisk together the pancake mix, unsweetened cocoa powder, protein powder, and water.  Please note that you may need to add more/less water depending on the brand of protein powder you use (due to the different thickening agents). Drop by 1/4 cup increments onto a hot pan. Flip once the edges begin to become cakey to cook on both sides. Repeat until all of the pancake batter has been used (this recipe makes exactly 3 pancakes for me every time). In a blender, combine the remaining ingredients— Greek yogurt, spinach, mint extract, and stevia. Spread the mint cream filling in between the chocolate pancakes just before serving. Dust with cocoa powder or top with carob chips if desired.
