Soft, Moist, and Flavorful: Ginger-Oat Protein Squares

Protein bars can be hit or miss. Too often, the addition of protein powder results in a hard, tough, or dry bar— so not the case with these delicious little treats! These protein squares are soft, moist, and flavorful. Not only that, but the combination of ginger and cinnamon creates a tantalizing treat reminiscent of warm gingerbread fresh from the oven. Enjoy these ginger-oat protein squares for breakfast, dessert, snacks… hell, it doesn’t matter when— just enjoy them!

Ginger-Oat Protein Squares

Makes 8 Squares

1 1/2 cups oat flour (you can easily make this by grinding oats in the food processor until a flour-like consistency)
2 scoops vanilla whey protein powder
6 packets Truvia/stevia
1/4 cup flaxseed meal
1 teaspoon baking powder
1 teaspoon ginger
1 teaspoon cinnamon
1 egg
3 tablespoons honey
1 1/2 cups unsweetened almond milk
1 teaspoon pure vanilla extract
1/2 cup unsweetened dried plums

Preheat oven to 375 degrees. In a bowl, combine the oats, protein powder, stevia, flaxseed meal, baking powder, ginger, and cinnamon. In a separate bowl, whisk together the egg, honey, almond milk, and vanilla extract. Slowly stir the wet ingredients into the dry ingredients. Lastly, fold in the dried plums (alternatively, you can use raisins, dates, dried cranberries, walnuts, pecans, etc.). Pour into a prepared loaf pan. Bake at 375 for 25 minutes. Allow it to become cool, then cut into squares.
