One of My Favs: Stuffed Buffalo Chicken Breast

Anyone that knows me, also knows that I’m a fiend for anything and everything spicy. There isn’t a thing on this earth that can’t be made better with jalapeños, habaneros, and hot sauce in my personal opinion! So today’s recipe is one of my absolute favorite clean eats dishes… stuffed buffalo chicken breasts! In this recipe, chicken breasts are butterflied, then stuffed with a mixture of cream cheese and diced jalapeños. As if that weren’t delicious enough already, the stuffed chicken breasts are then coated with a spicy breading made from oats. All of this results in a juicy and spicy chicken breast, overflowing with a creamy jalapeño filling. Nosh on this healthy dinner the next time you need a bit of spice in your life!

Stuffed Buffalo Chicken Breast

Serves 1

4 ounce chicken breast, butterflied
2 tablespoons Greek yogurt cream cheese (recipe previously posted here)
1/4 jalapeño, diced
1/4 teaspoon hot sauce (a clean variety such as Frank’s)
1 egg white
1/4 teaspoon hot sauce
2 tablespoons oat flour (you can easily make this by grinding oats in a food processor until a flour-like consistency)
1/4 teaspoon cayenne pepper
1/4 teaspoon paprika
1/4 teaspoon cumin
1/8 teaspoon black pepper

Preheat oven to 400 degrees. In a bowl, mix together the cream cheese, diced jalapeños, and hot sauce. Butterfly the chicken breast, slicing almost, but not all of the way, through the chicken breast. Spread the cream cheese mixture inside the chicken breast, then fold the chicken breast back over. In one bowl, which together the egg white and the hot sauce. In another bowl, mix together the oat flour, cayenne pepper, paprika, cumin, and black pepper. Cover the chicken breast with the egg mixture first, then coat with the breading mixture second. Place on a prepared baking dish. Bake at 400 degrees for 25-30 minutes, or until the chicken is thoroughly cooked.
