Is there anything better than starting your day off with a yummy plate of protein pancakes? The protein boost is essential in helping you power your way through your day, not to mention that pancakes are, well, just… darn delicious! This protein pancake recipe takes things up a notch, however, by utilizing sweet potatoes to create this culinary clean eats dish! Sweet potatoes are a healthy source of complex carbs, as well as a great addition to anyone’s diet. The mixture of sweet potato, vanilla, cinnamon, and spices is sure to satisfy almost anyone’s tastebuds. So test this recipe out for your next case of the morning munchies (or for dinner even— don’t worry, I won’t judge you).
Sweet Potato Protein Pancakes
6 ounces cooked sweet potato, cubed
1 scoop vanilla whey protein (I used About Time whey protein in Birthday Cake)
3 egg whites
1/2 teaspoon baking soda
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/2 teaspoon ground clove
1 teaspoon cinnamon
1/4 cup water
Optional: chopped walnuts for topping
In a food processor, combine all of the ingredients, except for the optional walnuts for topping. In a lightly oiled pan over high heat, drop the pancake batter by 1/4 cup increments, flipping when the edges become slightly cakey to cook the other side. Repeat until the remaining pancake batter is used. Recipe should make roughly 3 pancakes per serving.
