Sweet and Sour Shrimp (Serves 2; Crockpot Recipe!)
8 Ounces shrimp
1/2 Cup rice
1 Cup water
1 Cup pineapple
1/2 Cup pineapple juice
2 Packets Truvia/Stevia
2 Tablespoons rice wine vinegar
2 Teaspoons soy sauce
1/2 Teaspoon ginger
Optional: chopped bell pepper, sliced carrots, chopped broccoli, or any other veggies you’d like
In a crockpot, combine all ingredients except for shrimp. Cook on low for 1-2 hours, or until most (but not all) of the liquid has been absorbed. Add in the shrimp, then continue to cook on low for another 30 minutes. Serve over brown rice or a bed of steamed veggies! Yum!
I couldn’t get enough of this dish. It had the perfect amount of sweetness for me, and I just gobbled my bowlful up! Not to mention that it was a no-fuss dish to prep, since it was cooked in the crockpot quickly and easily! I hope you all enjoy this recipe as much as I did!
